Mix:

1. Sanitize puree bag and scissors. Cut bag in corner as shown in picture! Do Not cut valve port!

2. Direct pitch (no boiling necessary) 1 lb – 3 lbs per 5 gallons.

Typically used in secondary fermentation but can be used in primary. This will affect total volume!

Melomel: 1.25 lbs – 2.2 lbs of puree per gallon to desired aroma/flavor

Aroma: Wonderful aroma of a ripe and healthy papaya

Color: Beautiful orange and yellow tones of a papaya (it can present a slight change of color due to the natural process of oxidation)

Flavor: Intense flavors of a ripe and healthy papaya.

Appearance: Uniform, free of foreign matter, admitting a separation of phases and the minimum presence of pieces, dark particles inherent to a papaya
