Glucoamylase; also known as GA, AMG, or Amyloglucosidase, is step two in starch conversion. It is needed to form glucose/fermentable sugars from the ends of the smaller starch chains once the alpha amylase has broken up the long starch chains into many smaller ones (called conversion or saccharification).
